(i.e. how do you substitute MS Office apps or Google Workspace)

Good question. I use a local Microsoft Office 2021 Pro, NOT used with a Microsoft account. The documents are synced using end-to-end encrypted Sync.com.

Proton also released an end-to-end encrypted Google Docs equivalent (that I don't use for now), but there is still no equivalent of Excel/Google Sheet;

I didn't know OnlyOffice, thanks for mentioning it, it seems very interesting.

They offer end-to-end encryption, although not by default it seems.

Looks like Infomaniak, a swiss domain, storage and email provider, has built a comprehensive solution embedding OnlyOffice for document creation. Do you have any thoughts about it?

so you're mostly relying on proton which is most likely a honeypot by 5 eyes

I don't think it's a honeypot, but in any case I don't recommend putting all your eggs in one basket: on that point we agree.

I just use ProtonMail, Proton VPN and Proton Calendar, and I prefer to use Sync instead of Proton Drive, BitWarden instead of ProtonPass, and I don't use their crypto wallet.
